Description and history
Sencha green is the most popular tea in Japan. It is mainly harvested in the central regions of Kyoto and Shizouka. This undulating region is delimited by three mountainous groups: Higashiyama, Kitayama and Nishiyama, which sculpt an ideal topography for growing Camellia Sinensis plants .
The word sencha means boiled tea; the whole leaves of tea are infused in water at 80º C. The sencha is taken in a famous ceremony called Senchado: the path of the sencha. This tradition was inherited by the Japanese from Chinese culture who in the 17th century, when they arrived in Nagasaki and showed Japanese royalty how to properly prepare and drink tea.
Unlike Chinese green tea, such as Longjing, which is roasted in woks to prevent oxidation, sencha is exposed to steam for 15 to 20 seconds to prevent oxidation of the leaves. This process imparts a distinctive fresh vegetable and freshly cut grass flavor. The color of the infusion is clearly a vivid green, which communicates that fresh nature from which it comes.
